Ok my friends, in these
money crunchy times I have decided to let you in on
some recipes that are very, very similar to some of
the foods and treats you may be spending your money
on. And I'm going to show you how to do them at
home!!! Any similarities to items you recognize are
purely on purpose. Just to show you it is a little
cheaper to makes things at home. In the days of our
Grandpappys and Grandmammys they invented a thing
called a freezer. And in this freezer they stored
foods that they had prepared themselves. The purpose
of this was so they could survive during times like
the Winter. ( To those of you in LA, winter is a
time of the year when snow falls from the sky. It
blankets the earth and makes getting around trickier
than usual. But F- it anyway, that's what assistants
are for!!!) Unfortunately for some and fortunate for
others, I think freezers are going to make a
comeback!!! Even single people will be able to put
things that are not prepackaged in their freezers. I
am going to help you people. Let's get back to some
home cooked foods!!! IT'S TIME FOR A CHANGE AMERICA!!! I've heard that somewhere recently. ;) |

I'm moving on from queen's
landing. I am going to try my skills at a little New
York style butcher shop for awhile. www.nybutcher.net I'm
going to help someone open a franchise, until I can
save up some money and get out to LA!!! Check out
the website and see what I will be doing. This
allows me to get out of the kitchen and out with
some people. I like to spread the gift of gab
around, so this should be right up my alley. And I
still get to have my hand in the preparation of
food. A lot more meat cutting and focus on meat
dishes. I will be offering up recipes and ideas to
customers, but they will get posted on Pauliewood so
everyone can try them at home. And on another note, I love the BRAVES, but I gotta keep the home town in my heart. Good luck to the PHILLIES!!! Philly needs a championship bad. And LA with 2 teams in it? Ludicrous!!! |

Finally some really good news!!! My wife and I
are taking our long lost honeymoon. We have been
married four years this January. Money, time,
and kids have factored into our lack of
vacation. Not to mention the move to PA and back
again. So this January, we are heading to Hawai'i. I am doing the trip in segments. I bought the airline tickets, next I just have to find a room. Sometimes you gotta do it that way. This is going to be my second time out there, but Brandi's first. Should be a great time. Little adventure, little romance, and just a good long needed rest with my best friend!! I do remember the food is fantastic over there. Maybe I can find a few dishes and put my own spin on them. A little more home kitchen friendly!! I do know the # 1 food in Hawaii is oddly enough... you guessed it, SPAM!!! Look it up if you don't believe me. I wouldn't lie to ya!! :) |

I'm back!!!! Let me tell you about this thing called
life and how fast it flies by, Sheeeeesh. Work is
finally slowing down for me. Weekends are busy.
Still have a few weddings to attend to. But the week
had died off a little. Gives me a little more time
to handle my side projects. (I am available for a
little winter catering if anyone is interested. ;). My oldest, Travis just started pre-school. He is only 3 but he is getting a jump on things. Education and social skills. Now Jake gets a few extra hours of mommy time that he was needing. So all is good. Brandi is off to Virginia beach for a much needed girl's weekend with her friend and my sister in law. They all have Brad paisley tix. Should be a good time. This means I get a weekend soon myself, can't wait for that. Can't complain though. As busy as it's been at work, I still had a good summer. Brandi and I just saw Kenny Chesney, good show if you ever get the chance. It was my 3rd time and Brandi's first. Leanne Rimes opened. That girl can sing live. Next my food rep is taking me to a Phil Lesh/ Allaman Brothers show. Sweet, get my hippie on. All right, gotta get back to work. Try some of my recipes.... If you like 'em let me know. Sitting here waiting on the Sysco truck. Today
is my day off, but as most chef's know, there is
always something to do. I have to be here to put
everything away and check it all in. Not that I
don't trust anyone else, I just like to be the
one held accountable if there is a mistake.
Plus, then I know everything is being put away
correctly and rotated. Not everyone cares. I do. Football season is just about upon us. I don't know if I mentioned this, But I am a die hard EAGLES fan. And in my eyes, we are the team to beat this year. Most seem healthy. McNabb seems to be focused, could be the first time in years. And like him or hate him, he's a great athlete. I had the pleasure of meeting him once in Dover. He showed up to the track to do something with Jeff Gordon. Had a tie in with the Tag Heuer watches. ( I think that's how you say it.) Nobody knew he was coming. Dover is about 65 miles south of Philly and our fans stretch far. So there were a lot of everyday people in the pits wearing there best Eagles hats and shirts. McNabb was asked to sign and pose as all celebrities do. And he DENIED everyone!! Now as a NASCAR employee, I usually left people alone. But I waited till I knew he was away from the crowds behind the scenes. Told him who I was and where I worked. Asked for a photo or to sign my hat, he also said no. Kind of broke my heart. He was never a hero of mine, but he was the leader of my team!! And he said no. The whole trip was treated like it was a bother to him. And I guess in some ways it was. But non the less, I still pull for him. Or for as long as he my quarterback. Once he moves on, I said good riddance. I have supported many Eagles players after they left. But I will not follow McNabb closely. He is no Randall Cunningham!! And as my father always say's " We support two teams in our house. The EAGLES and whoever kicks the COWBOYS ass!!!" |

Let's get back to what I do best. Cook. Brandi and
I are trying to eat healthier these days. The #1
thing I need to do is quit sodas. And I think from
previous blogs we know that is very hard for me. But
I'm trying. With our newest venture, we have decided
to try another way to get healthy. No red meat. Not
vegetarian, just no red meat. At first I thought,
impossible, but it seems to be working. The concept
of this diet is to make me more creative. We are
allowing fish, for obvious reasons. And we are
allowing chicken and turkey, which I'm not the
biggest fan of to begin with. So it's easy to cut
back on them. And oddly enough I don't eat much
fruit. The plan is simple enough. I am forced to get my creative juices flowing by incorporating better foods into our diet. It's not that I don't like the fruits and fishes, or even the turkey. I have just been trained not to eat them. Convenience is the other root of all evil. Most people with kids know, the faster the food is done, the less crying. But not always the best meal. As I try to bring the foods I create at work home... I am going to post the recipe. feel free to use anything I post to feed yourself or your family. Because that's what I am going to do with it!!! Here is one of the simplest meals my kids love. It is an all time classic I was raised on. But I am going to make it a little healthier for my boys. Hot Dogs and Eggs for two Start by replacing your everyday hot dog with Smart Dogs (or comparable veggie dogs). Slice the dogs into small coin size portions. Next whip up cup of egg whites or egg beaters and place it off to the side. Sautee your dogs in light olive oil until they are golden brown. Next pour the eggs on top and mix them with the dogs. When eggs or looking light and fluffy, add two slices of 2% cheese to the top and slightly melt. Portion out onto favorite Superman or Spiderman plates and serve with a side of Mandarin oranges. This recipe may seems silly to some, but I stake my claim on the fact that your kids will LOVE it. Easy and healthy. And most likely, you will love it too. :) |

North Carolina has finally gone to head sets on the
cell phones while driving. We are a little behind
times. They didn't pass the open container law until
2001, so we are ahead on this one. I am actually
excited. The reason being is this, Apparently new
phones come with a protective personal bubble. I
mean I have noticed a lot of people with special new
powers. Like the walking across a major road while
on the phone. When you have your phone to your ear,
it makes you invincible from oncoming traffic. It
must, I see people meandering around without a care
in the world while in the middle of a F**king
intersection. And I love the sound proof bubble for
when you are in public and receive a phone call. I
can barely hear the conversation you are having with
whoever the F your having it with. And the feature I
look most forward too is the invisibility cloak that
is provided with ear pieces. I don't want everyone
to think I am talking to them when I walk around
having a conversation. I have scene people hold
random conversations with themselves while in
college. But that was Baltimore and they were
homeless. I definitely don't want to look silly like
that. And this blog goes to the Jackass I had to wait for yesterday while he crossed the street talking on his cell phone. Next time, I may jump bump one of ya!! The day is coming!!! |

This weekend the NASCAR series is heading to
Indianapolis. Certain weekends remind me of some of
the things I got to see and do while I traveled with
them. I have met numerous celebrities, athletes,
military, politicians, and just general great
people. But this weekend reminds me of one of the
most unique and genuine experiences I ever had the
pleasure of. My roommate on the road for awhile was long time flagman and celebrity in his own mind Jimmy Howell. Great guy. Jimmy was a huge Hoosiers fan and watched it whenever possible. Now Jimmy accumulated lots of friends and acquaintances along the way. It happens (Hell some stay in touch and let you write on their websites). And as you accumulate you start calling in favors and trade offs. Golf, dinners, Movies, you'd be surprised some of the things people will give you just for Pit passes. Well, Jimmy had become good friends with a few folks in Indy and they decided to repay him for all the years. And I got to partake in the deal also. Jimmy and I had the fortune to meet up and have dinner with the great Bobby Plump. Now most people are thinking, who? Bobby is considered an American Hero in the old school way. The kind of Guy who does something they make movies about. He was the gentle man who scored the final free throws in the Indiana high school championship game back in '54? (I think was the year). I won't give all the details in case you haven't seen Hoosiers. But the jest of it was small town school makes it all the way and beats powerhouses to win it all. Bobby owns a restaurant in Indy called Plump's Last Shot. Great little place. We spent the night hearing the official story told from the official guy. And I sat there mesmerized. Even though you could still tell he had told the story thousands of times, there was still a great sense of pride in his eyes as he told it. Plump signed a copy of his book for me . And we spent sometime talking about what Jimmy and I did for a living. And he was so interested in our jobs. I have never been back out to Plump's. The following year my wife gave birth and the year after that, I was gone from NASCAR. Funny how you always just assume you will be back. Maybe someday I'll make a special trip. And hopefully Bobby will still be there. I remember telling him it had been a pleasure and an honor. And it really was. Out of all the people I met, that is one I will cherish and tell my kids about. |

Ok, Ok I'm blogging. The big boss at P-wood's
putting the muscle on me. I wonder if Doogie
Howser got this kind of pressure? I have been about as busy as you can be. The fourth of July came and went without any real incident. I set up a grill out on the facility here to try and take some of the pressure off of our grill and piano bar. Well it worked. I ended up cooking burgers and hotdogs for 750 walk up customers!!! so I guess we would call that a success. And since the fourth we have been moving right along. Wedding after wedding and such. Haven't seen my wife and kids all that much, but I do what what I can when I can. Luckily my wife is very supportive. She's a great girl. Enough about work. All my NASCAR buddies are feeling the crunch. Teams are dropping and sponsors are leaving. Normally there is a mid season shift for teams who aren't making it, there just seems to be a lot more than usual this year. Maybe NASCAR is finally feeling some of the financial heat the rest of us are feeling. Now if we can just get that 61 car in the Nationwide series to do something, things would be all right!! Ok, I'm going back to work. I feel refreshed and inspired for more blogs. Hell, I might even write another one today when I wake up a little more. It's harder to get going lately, I have been fighting the energy drink horse for about a week now. Only a few drinks. I will kick this habit. I had to go back to my original demon for help but it is getting me through, thanks Mountain Dew. (She's always been in my corner). And only 150 people to cook for today, this could be a good day. I hope to get home and relax and watch the UFC fight on spike to night. Thank god the UFC throws me a bone every now and then and they put a free fight on TV. Gives me a chance to catch up on my Pay-per- view bill!!! Peace |

It's amazing what a day off of work can do
for you. Yesterday was my first day off in
two weeks. So me and the family packed up
and got the hell out of Dodge. I took
everybody to Pilot Mountain NC. It's a small
mountain north of Winston. My Brother and
Father both live a few miles from it so we
made a day of it. My dad lives in King were
R.J. Reynolds is located. Yes the home and
birth place of a lot of cigarettes. And My
brother lives just south of MT. Airy which
is better known as Mayberry. This is in fact
the town were they filmed Andy Griffith.
Nice little town. Maybe we'll get Paulie a
Barney Fife T-shirt next time we're there. So we hiked the Mountain with the boys. They LOVED it. It wore their little asses out too. They slept till 8:30 this morning. Unheard of. And we did a good deed while we were there. I found a baby Turkey Buzzard laying on some rocks near a cliff. He looked hurt, so we reported it to the ranger station. It was a baby, but it was HUGE. And kind off disgusting looking. But non-the less, it needed help. Tonight is the season finally of Hell's Kitchen. I know a lot of people think Gordon Ramsey is over the top, but look at it this way. I have been in the food business for 15 some odd years and I have seen it all. Be happy someone is on TV giving a crap about flavor, taste, and appearance. It is a lost form most Americans gave up on. I think it is kind of nice to see it. Any chef worth beans has worked with a guy like Gordon, and they are better chef's because of it. And for all of you who say "I would knock that guy out" or " He wouldn't talk to me that way!" Can piss off. Because Gordon would probably smack the sh*t out of most people. Not to many true chef's are pansies. Most of us grew up in societies under bellies. So watch your mouths America! And when I get out to LA, I will be visiting his newest restaurant. |

Been a crazy weekend here at work again. 5
weddings and my first ever commitment ceremony.
Two gentlemen confessed their love and faith to
each other. That stuff never really bothered me
too much. I figure It's not my business and I
have my own problems to deal with. I have a few
friends who are of the pinker persuasion. And I
wish them the same as all my other friends. Find
someone who makes you happy and run with it. And
all I really care about this weekend's
ceremonies was whether the guests liked the food
or not, that's my real concern. And it went off
without a hitch!! We are getting ready for the 4th of July now. Not busy during the week, but Friday will be slamming. We host the largest fireworks display on the Lake. I will be pulling double duty that day since the grill cook for our burger joint is on vacation (You better have a good time, Charlie!). One of these days I'm going to be in a position were I can have a few holidays off. I have kids now and they deserve to see me!! Until then I'm off to get back to work!! |

I'm kinda bummed out. I was supposed to
head to Atlanta Tuesday to see the Braves /
Phillies game. But something at work has
popped up. Always a monkey wrench. The trip
was even Brandi's idea. It sucks but that's
how it goes. Responsibility is a bitch!! And
on top of that, it's Friday night and I'm
home watching the kids while Brandi works.
The kids are sleeping though so that makes
it a little easier. But I've got these damn
kittens running around the house likes it
the Kittiannapolis 200. I had 4 three hours
ago, but somebody finally came and picked 2
of them up. They can't stay here. There
mother is a little kitty ho we let in off
the street. I said no, but the boys and
Brandi let her in. Then she went and got
pregnant. And isn't it always the way, I'm
at home and the mother cat is out running
the streets!!! Always coming home hopped up
on the nip!!! And smokin' Pall Malls. Motha
F-er!! But the good news is now I get to take some time and meet up with Pauliewood for a rendezvous. Maybe the RMC if I can convince Paulie to head out to PA for a biker rally. My Dad's band is playing and I am invited as always. Let's do it Paulie!! That would be some footage to look for!! Peace |

I'm a victim. Plain and simple and I hate to
admit it. I'll start by saying that were I grew up in PA was not the best of areas. It had it's good spots but mostly bad. Lower income, blue collar, listless kind of town. My front yard ran right along hwy 422 in the metropolis of Baumstown. Preverbal map dot. My high school was in Exeter and that was a better middle class area. But were I was, was crap. I was about 60 miles or so outside of Philly. I do thank God I went to the school I did because I was surrounded by good people, for the most part. My neighbors however were a different story. Drugs were a common thing for them and work was not. Heroin became the big thing for them. So I got a lot of exposure to a lot of exciting drugs. Everything you could think of. But thanks to my pops, and his work ethic, I saw to it to get my a$$ out of that town. Paid my way through college, saw the country, did it all. And I did it all drug free and happy. I didn't even eat aspirin! Now the victim part. I have finally succumbed to the fact that I have addiction I may need treatment for. And I think I am not alone, and no one is talking about it. The DAMN ENERGY DRINKS!!!! I can't stop drinking them. I tell myself they are bad, but I keep giving in. And I feel crappy without one. What has happened to me? Am I alone on this? I think not. Let's see if we can start doing something about this problem. I told my wife I need rehab. She laughs, but I think I do. I have mood swings, it's crazy. F all the energy drinks!! IF anyone knows how to quit, or if there are classes, Please let me know. |

If anyone out there is actually reading my
blog, and interested, I am sorry for being
away. I have been super busy at work!! Right
now I am averaging 6-7 days and 10-11 hour
shifts. Brutal. I have wrote a few blogs,
but they didn't get posted. Sometimes I can
be a little off color and inappropriate. But
Pauliewood has an editor and they keep me in
check. Now my question is this.... When do you know you are stressed out or actually having a mid-life crisis? Lately I have been super busy and hating my job, but who isn't? I guess not really hating it, just frustrated with it. I am at the point where I think I may need a career change. Or a better position in this field. Such as moving to LA to pursue my Pauliewood aspirations. But I am not sure when or if that will happen. I do have a family so all my moves have to be wise ones. Moving from North Carolina to LA would be a huge step. I mean we just moved from Carolina to PA, and back to Carolina again. And my wife Brandi spit out 2 kids all in that short time. Travis and Jake are 14 months apart ( 2 and 1 respectfully). Back to my question though, are mid-life crisis's like they used to be? Can you see it coming? Is it really mid-life if we are living longer? Maybe they are quarter life crisis's and we get to look forward to more of them as we go. I'm at that fork in the road now. I'm young enough to make a change, but to baby tied to make it. It is a lot different when three other people depend on you. I can't just do what I want anymore. Plus, with the way money is changing right now, who can keep up? Houses are almost impossible to buy if you don't have squeaky clean credit. Yet everyone is having a hard time selling their homes. Doesn't make sense. And technology is moving at the speed of light. I once said to my father..."when you were a kid it went, radio to TV in 15 years or so, then another 10 years for color TV, and then another 20 years or so for cable. Now look at it, I can't even keep up with my camera!" Things are changing on a daily basis. Phones, TV, Blue-ray vs. High def, Gas is killing everyone, it's crazy!! My grandmother is terrified about all cable going digital in '09. She thinks the remote is too much for her. And I'm sure she is not the only baby-boomer worried about that. Times they are a changin'! I just worry I can get myself on track so my boys have a chance. I guess the reason I wonder if it is a mid-life crisis is because I feel young, I'm pretty happy, my wife's a hottie, my kids are great, and life is ok. But I feel like I am bitching like a 65 year old grandfather!!! Is that normal? At least I have this blog as an outlet. Let's me get a few things out of my head and on to paper. The economy is killing me. I can't keep
employees to save my life. Everyone is
scrambling to make better money to pay
bills!! I understand fully, I need more
money too. But it just seems to me that this
"gas crunch" has everyone's budgets going
haywire. No one is willing to stay at their
job and ride out this wave. They think they
are running to greener pastures. Well, let
me tell you something, one of the biggest
hits industry wise is going to be food!! Not
all places are going to survive. So quit
jumping from job to job!! It looks bad on
your resumes anyway! This past week, I had 7 employees quit. All for what they think are better jobs financially. My stress level is almost at an all time high. But what can I do? I am the Train that keeps chugging along!! Someone in this country has to keep their job, or no one is going to survive in this business. We may not all like where we work, but some should look at the bigger picture and be happy they are working!!! And for any of you reading my little blog, thanks for letting me vent!!! Makes me feel better!! |

Give me a second to slide my soap box over
here..... ok. Here is my Blog/Gripe of the
day. Everyone is worried about gas prices
right now. It is the biggest conversation
everywhere we go. I even traded my truck in
and got myself a JEEP. Helps a little. The
way I see it, I can't personally do anything
about the price increase. But what I would
like to lobby for is this... How about
bringing back some professionalism to gas
stations!!! Let return them to service
stations. What got me going the other day
was as I was filling my tank, I went to wash
my windows. NO F#%^ing water or squeegie!!!
I then went to get a quart of oil. Good luck
finding that without a map. Let's put some
mechanics back at the service stations and
let them service our cars. Remember in the
movies what it was like for our parents? Guy
runs out, pumps gas, checks oil, washes
window, put air in tires, sings a Billy Joel
doo wop and runs off!!! Where the hell did
that go?? So I say screw all the hairy bastards who own the GAS stations, and let's open up some SERVICE stations. And remember this reality check, as long as NASCAR doesn't miss a scheduled event, there is no gas shortage!!!!! Wake up people!!! I'll put my box back...............................for now!!! |
| Ok, I don't know were you are this country...But here in NC it is hotter than a rainforest monkey in a fur coat!!!! Tipped 100 degrees for the fourth straight day. And it's barely June. My peanuts have been roasted, salted, and boiled, all in the same day. It's hot in this kitchen, but enough of that. To follow up on my last blog, I saw that i miss worded a few things. The fella who got "KNOCKED THE F*** OUT" was at the bar my wife, Brandi, works at. Sorry for the confusion. Other than that, same old stuff. I have a dinner on theLady of the Lake tonight for 100 people. Always fun. All you chefs out there know what it is like to be on your 10th straight day of work and not seeing a day off coming soon. This I have to put in here!! I am a firm
believer in Karma. And there was a time in
my life when I didn't take s^^t from anyone.
But as I've become a husband, father, and
just better adult, I find myself avoiding
confrontation. Well where my works, there
has been this little jackass who has made it
his personal mission to get under my skin.
150lbs wet holding a brick kind of guy. I
want to take him outside and wear him back
in as a jacket every time I see him. But I
don't. Out of respect for my wife, the bar,
and my kids I have avoided trouble. Now he
fills the bar with tales of his NY state
championship in wrestling, at I think 112
lbs. He tells of his time in Attica, He
revels on about his knowledge of blah, blah,
blah. See what I mean? Anyway last night he
starts talking at the bar about gutting a
deer or something. A couple eating dinner
next to him expressed how gross his
conversation was and ask him to stop. After
a heated exchange, the man stands up
performs a one punch knockout on this
Jackass!!!! Has to be the highlight of my
week. Just goes to prove small bar jack-offs will always get what's coming to them!!! I feel my Karma and patience allowed me to enjoy that high life moment!! Take care. |

Ok, so I work at this place on Lake Norman
in North Carolina. I am the executive chef
of the whole facility, and we have many food
outlets. One is a dueling piano bar. I just
order there food for them and help control
food cost. Two I have a small grill, family
style, facing the lake. Kind of a burger,
hotdog joint. But third and most
importantly, we have two ships that serve
lunch and dinner. One is an old school river
boat, and the other is a luxury yacht. These
are were I concentrate 90% of my work. It's
not uncommon for me to cook for 4 boats in
one day. And they could all be weddings, so
you can imagine. In a whole it's a pretty
cool place. At least I see the lake every
day. I'm not going to lie, it can be
stressful....so maybe I'll make it exciting
and use this blog as a way to vent!!! And I guess I should mention Lake Norman is in Mooresville, NC, or Racecity as they like to call it. So I am still surrounded by the everyday of NASCAR. Even though I've moved on from the company. All right off to watch the UFC. GO BISBING!!!! |
| My First Blog....!!!! Well I am the former Executive Chef for NASCAR. That is where I met my boy Paulie, of PAULIEWOOD.com. I'm out in North Carolina gearing up for the Pauliewood launch. I'm a trained chef from The Baltimore International College and have traveled all over this big country. My wife, Brandi, and my two boys, Travis and Jake, keep me going when I am not at work. I will keep everyone posted on my day to day while we get ready to take over as Paulie's Chef!!! |

Peanut Butter Cups I may have to change some names here, But I think this is Gabby Reese's favorite peanut butter snack in a cup!! Ingredients: 6 oz. Pkg semi sweet chocolate chips 4 Nestles milk chocolate bars 1 1/4 cups peanut butter small muffin tin liner's Directions: Put chocolate chips, chocolate bars, and 1/4 cup peanut butter in top of a double boiler over hot, not boiling water. Stir until nice and smooth. Next spoon half of your mixture equally into the muffin liners. Melt the rest of the peanut butter over hot water and spoon equally over chocolate layers. Now top them all with the remaining chocolate. Refrigerate to allow the cups to set up before serving. Now as a side note: To make them look original, get some white candy sprinkles and put them on top. I mean I'm just saying.....We don't want anyone to think anything. |

Here is a recipe for chicken salad used to cook for
the officials in NASCAR. Very simple to do, but for
some reason, I couldn't keep up with it. So I had to
make it in bulk. Here is my condensed home version.
But instead of chicken, we are going to give you an
idea for left over Thanksgiving turkey.

Homemade Apple Buffalo serves 1-2 Ingredients: 1 Bison filet ( easier to find than you think) 1/2 cup frozen apple slices (very common in freezer section) 1 pint heavy cream 1 small block of smoked gouda (you'll need about 4 oz.) 1/4 inch cubed salt and pepper Directions: Preheat oven to 375 Take your filet and slice it on the side. Not in half, you want to make a small pocket. Season both sides lightly with salt and pepper. In a small sauté pan brown both sides of filet. Don't over cook, rare is fine. Remove filet and set off to side. In same sauté pan add your apples and warm them. Don't over cook. You want the apples to have apple consistency, not applesauce. Once heated, take a tablespoon and carefully stuff your filet with the apples. It doesn't need to close, allow apples to spill out. Place filet into an oven friendly pan and place in oven. Filet should cook for about 10 minutes. Don't worry about over cooking, the apples will keep it moist. Now while the meat is cooking, pour 1/2 cup heavy cream into a sauce pan. As cream comes to a simmer slowly add gouda and mix. don't let cream boil over. When filet is done, drizzle cream sauce over top and serve. Goes perfect with some homemade Yukon Gold french fries!!! ot Dogs and Eggs for two serves 2 Ingredients: 2 veggie dogs 1 C egg whites or egg beaters 2 slices 2% cheese 1 C mandarin orange slices for side (1/2 C each serving) Directions: Start by replacing your everyday hot dog with Smart Dogs (or comparable veggie dogs). Slice the dogs into small coin size portions. Next whip up cup of egg whites or egg beaters and place it off to the side. Sautee your dogs in light olive oil until they are golden brown. Next pour the eggs on top and mix them with the dogs. When eggs or looking light and fluffy, add two slices of 2% cheese to the top and slightly melt. Portion out onto favorite Superman or Spiderman plates and serve with a side of Mandarin oranges. This recipe may seems silly to some, but I stake my claim on the fact that your kids will LOVE it. Easy and healthy. And most likely, you will love it too. an Love Cake.....Best cake you'll ever make out of your kitchen Ingredients: 1 Choc. cake mix (and it's own ingredients) 3 eggs 2 lbs whole milk ricotta 3/4 cup sugar 1 tub cool whip (must be cool whip) 1 instant Jell-O pudding, chocolate 1 cup whole milk Preheat oven to 325 Directions: Ok, to skip formalities, this recipe calls for a 9"x13" baking pan, your basic chocolate cake mix, but it must be one that calls for vegetable oil. Next step is to make cake mix as it calls for on the box...stick with me. Flour the pan and add cake mix, Here is the good part!! Mix 2 ricotta cheese, eggs, and sugar in a separate bowl. Next gently add and spread the cheese mixture to the top of you cake mix. Bake in oven for about an hour. After an hour keep applying the toothpick test. (this is when you put a toothpick in your cake, if it comes out clean, it's done). Then let your cake cool to room temp. While we are cooling, make the topping. In a mixing bowl blend your container of cool whip and instant Jell-O pudding with whole milk. Apply topping to cake and place in fridge over night. It is very important for this cake to sit in fridge over night. I promise if you eat it early, it will not taste good. Be patient and you will be rewarded!!! |

Firecracker Fruit Salad Serves 4 Ingredients: 1 pineapple 1 carton strawberries 1 honeydew 1 cantaloupe 6 bananas 1 3-4 oz. can jalapeños fine black pepper Directions: This is a favorite of mine. Cut and clean all fruit appropriately and put all into a mixing bowl. Add whole can of jalapeños with juice and 1 tablespoon of fine black pepper. Mix all ingredients together and serve. If you like spicy food, this is for you. The jalapeños and pepper seems to open up your taste buds and allow the fruit to rush into your system. This is a very invigorating and refreshing dish. It will have your friends talking for weeks. May sound weird, but trust me on this one. |

Little Pasta of Mine Serves 2 Ingredients: 2 Cups cooked whole wheat penne pasta 1 cup julienned and blanched asparagus 1/4 cup pancetta 12 shrimp, peeled and deveined 1 pinch saffron Tbsp butter 1/2 cup heavy cream tsp garlic Salt and pepper Grated parmesan Directions: Start by sautéing garlic in butter for a few seconds. Add pancetta and asparagus. Allow pancetta to lightly brown. Next add shrimp and cook to a nice pink. Toss in a little salt and pepper for taste. Then add saffron. Now add heavy cream and bring to a simmer. Finish by adding pasta and just enough parmesan to thicken everything. A few diced tomatoes add color but are not necessary. I like to have Italian bread with my pasta like everyone else, but don't forget your doubling your carbs that way. Try a slice of whole wheat instead. ;) |

Soda's In honor of the new Star Wars cartoons, and risking plagiarism, and simply for the fact that I am a dork, here is a recipe I discovered years ago. we tried it at the house the other night and my boys loved it. I did change a few ingredients to protect the innocent. Ingredients: 1 Lime 1 Sundrop soda ( found in NC, SC, And a few other states) Lime sherbet Directions: Add to scoops of sherbet to a glass. Drizzle a little lime juice on top. Not to much, about 2 squeezes out of a quartered lime. Add Sundrop soda. Serve immediately. My original recipe called for sugar, but the Sundrop soda is like a hopped up Mt.Dew. * Pauliewood disclaimer.. If serving this to your kids, I recommend during the day. This is an under used classic!!! Stuffed
peppers!! Ingredients: 1 pound ground turkey 1/2 cup uncooked long grain white rice 1 cup water 6 green bell peppers 1 tsp fresh garlic 1/4 cup diced onion salt and pepper to taste 1 teaspoon Italian seasoning 2 small cans tomato sauce Directions: Preheat oven to 350 degrees. Place the rice and water in a saucepan, and bring to a boil. Reduce heat, cover, and cook 20 minutes. In a skillet over medium heat, cook the turkey until evenly browned. Remove and discard the tops, seeds, and membranes of the bell peppers. Arrange peppers in a baking dish with the hollowed sides facing upward. (Slice the bottoms of the peppers if necessary so that they will stand upright.) In a bowl, mix the browned turkey, cooked rice, 1 can tomato sauce, Worcestershire sauce, garlic , onion , salt, and pepper. Spoon an equal amount of the mixture into each hollowed pepper. Mix the remaining tomato sauce and Italian seasoning in a bowl, and pour over the stuffed peppers. Bake 1 hour in the preheated oven, basting with sauce every 15 minutes, until the peppers are tender. An extra option is to sprinkle a little asiago cheese on top of each pepper when there is about 10 minutes of baking left. |
